Healthier Eating

Recently, I have been trying to introduce more veg into my diet.

So these are what I have been eating recently:

Overnight Oats with cherries and apple. I am really loving this. Love that it is healthy yet so delicious. It is filling and it gives me the energy I need for half the day. And it is a bonus that is sweet too!

Simple slices of apple and Japanese cucumber plus a handful of blueberries. The strawberries are leftover from the girls. And a large scoop of yogurt. This is so good and so simple.

Zucchini. I am eating zucchini for the first time in my life. It tastes a little like potato to me. Not exactly a fan, but not adverse to it either.

Another miss mash kinda salad with zucchini, apple and Japanese cucumber slices. And a tub of greek yogurt. I tried greek yogurt this time since I have read so much about it. Well, it was delicious much to my surprise. I always imagine greek yogurt to be soury. But hey, they are really yummy.

So here it is my take on a healthier eating. I am definitely on the look out to try out other healthy recipes. We see how everything goes.

Wordless Wednesday: Hide & Seek

Since he started walking, Alkes has been playing Hide & Seek with me. He loves to hide behind our dining table and sneak a look at me. When I peep at him, he will burst into laughter. It melts my heart.

Crafty Venture: Amigurumi Bear

This is definitely my fav so far. It took me longer than I thought. I got to unravel the stitches a couple of times. So I am glad I managed to get it done.

I found this Blue Bear pattern here. It was love at first sight. It was an immediate decision to crochet it.

Since I have the color of the yarn on hand, I started the crocheting process. To make a larger, more huggable bear, I used double DK Milk Cotton yarn with a size H hook.

The head, body and arms were easy enough to crochet.

The toughest part was the legs. As I do not know how to read crochet pattern, I could not understand how to crochet in rows. It was purely trial and error with a lot of modification that I managed to complete the legs. Although it did not turn out exactly like the pattern, I am still happy with it.

Finally it was time to sew the parts together. With more experience, the sewing part is getting easier.

The girls loved the bear as much as I do. And we collectively name it Puffy. And we welcome Puffy officially to our small little amigurumi family.

We love you, Puffy!

Baking: Neon Pink Cupcake

The girls were at home with me as the CC is closed for National Day holiday. So we made cupcake. And to celebrate the nation's 49th birthday, we decided to have neon pink icing for our cupcake!

The cupcake took us a just a while to bake. But it took a bit of time to let them cool down. And the girls were excited about the pink icing.

It was my first time making icing. Oh gosh! I thought it was tough. But hey, it is actually rather fun and easy to make. Anyhow, after adding a humongous amount of icing sugar and butter, I was able to whip up a decent looking icing. And we had fun decorating our cupcake.

I first had a go at decorating cupcake, followed by Atria who diligently piped the icing onward everyone of the mini cupcake that we baked. It was so fun and easy. The girls ended having pink icing with cream crackers. No doubt, we would be doing it again soon.

What I have been cooking lately

Since staying at home, I have been trying to cook more.

I loved to cook. But I am not such a great cook.

I can serve up simple meals, to feed a household of 5. But I have never been a elaborate chef. I tend to go for simple and easy to make dish. And hey, I can whip up a decent meal of 4 dishes and 1 soup in 30 minutes.

Anyway, I have been experimenting. And these are what I have been cooking and eating lately.

Lightly toasted multi-grain bread with generous serving of kaya:
This does not require any cooking. I am currently in love with this multi grain bread. I love the crunch it gives and it leaves a tiny hint of sweetness. It goes very well when toasted with ham and plenty of cheese too! (On a sidenote, I am loving my mason jar I gotten from Amazon. They are amazingly cute!!)

Sichuan Mala Beancurd Skin:
I LOVED spicy food. The spicier, the better. And I am obsessed with Sichuan Mala hotpot and the many side dishes. And I managed to whip up a pretty decent one. This is a simple dish with bean curd skin, shredded carrot, Japanese cucumber and a pretty decent amount of "LaoGanMa" Chilli Paste, plus a dash of Thai Fish Sauce. Toss it well and you are good to go. This is so good! I almost finished the whole plate on my own.

Oven-baked Pasta:
This is a mishmash sort of meal. The gas died on me and I got to throw together a meal with whatever I have. And this is it. It is just simple tomato based pasta, topped with a huge amount of cheddar cheese (It would taste better with mozzarella, but I don't have that) It is decent. And simple. And filling. So thats good for me. A typical comfort food.

Well, I look forward to cooking more often. We will see how it goes!

August 12 on 12th

To fully immerse in my One Little Word "Embrace" this year, I am starting this 12 on 12th on the blog. To document our life as it is. Nothing special or spectacular. Just celebrating those happy little moments.

So here is my take this month:

The littlest has started walking since he put on his new shoes last week. He loves to take his shoes and shove them to us.

Preparing to go for a walk.

It has been a while since we were here. The weather was nice and cooling for a little walk by the beach.

Somehow this picture of the empty bench kinda saddens me.

The littlest enjoys his walk and some interesting leaves I found.

Back home. Fooling around as usual.

A simple lunch. Leftover brown rice and bacon from yesterday. A little washing up.

The littlest loves to play peek a boo.

More playtime after his short nap.

A new friend found on IG. Was exchanging messages on favorite yarn and stuff.

The hub sent me a picture of his lunch. Looks super yummy. Makes me hungry.

On the way to fetch the girls from the CC.

The girls fooling around in the cab. As usual.

It was a normal quiet day at home with the littlest. Nothing much, but oh so great.

Looking forward to a awesome September. :)

Wordless Wednesday: He Walks

The littlest has been exploring, and hiding under the dining table.

After much anticipation, the littlest finally took his first stride forward. It was a moment to celebrate!

It is the time to explore, the time to discover, the time to celebrate! And also many many opportunities to get into trouble too!
